Not Worth It

Today my mom and I also discovered why no one in our family has ever previously made watermelon rind pickles, and why we will never be making them again.
The pickles may be delicious. We do not know yet. We do know that seven pints of watermelon rind yielded three pints of pickles. Which would be an economic use of something we don't normally use, if it weren't for the four cups of sugar and six cinnamon sticks that also went into the pickles. And the amount of effort involved in cutting up that much watermelon rind. The yield, in other words, is really not worth the effort, and I do not recommend it. Just so you know.
